Lettuce in Creamy Anchovy Sauce

* 1 cup yogurt
* 5 anchovies (use anchovies in oil), mashed
* 1 tsp garlic, mashed into a paste
* ¼ ground white pepper
* ¼ tsp salt
* 250 grams Romaine lettuce, chopped into bite-sized pieces

1) Whisk together yogurt, anchovies, garlic, ground white pepper and salt in a bowl.

2) Pour over Romaine lettuce and toss. Serve immediately.



Compiled Recipe – No Bake Frozen Berry Pie

No Bake Frozen Berry Pie

* 25 chocolate sandwich cookies (use oreo cookies), crushed
* 5 tbsp butter, melted
* 25 grams semi-sweet chocolate, melted in a double boiler or in a microwave
* 3 cups strawberry ice cream, softened
* 1/3 cup blueberries, fresh or frozen
* 1 cup strawberries, sliced
* 1 (90 gram) pack yogurt, blueberry flavored
* 1 (250 gram) pack all purpose cream
* strawberries or blueberries, sliced

1) Make the crust: Combine all ingredients. Press onto the bottom of a 9-inch round pie pan. Freeze for about 30 minutes or until firm.

2) Scoop half of the ice cream onto the crust and spread with a spatula or the back of a spoon. Carefully stir in berries.

3) Swirl yogurt into ice cream using a dinner knife or spatula. Top with the rest of the ice cream. Freeze pie until set, about 4 hours.

4) Make the topping: Whip cream until soft peaks form. Spread on top of pie. Garnish with berries.




Compiled Recipe – Chicken Shawarma Salad

Chicken Shawarma Salad

* ½ tsp ground cumin
* 1 tsp ground cardamom
* ½ tsp ground coriander
* 4 cloves garlic, finely chopped
* 1 cup yogurt
* 4 boneless chicken breasts
* 1 medium head iceberg lettuce, core removed, sliced
* 2 heads baby romaine lettuce, torn into bite-sized pieces
* salt (to taste)
* ground black pepper (to taste)
* 1 head garlic, peeled
* 1 small potato, peeled, chopped small
* 2 teaspoons lemon juice
* 3 tablespoons olive oil
* salt (to taste)

1) Mix spices, garlic and yogurt in a medium bowl. Season chicken breasts with salt and pepper and then place in a marinade. Toss to mix thoroughly. Chill overnight or at least 2 hours.

2) Meanwhile, make the sauce: Put garlic and tomatoes in a small saucepan and fill with enough water to cover them. Place over medium heat, simmer and cook until garlic and potatoes have softened. Transfer to the bowl of a mini food processor, reserving liquid, then process. As the processor is running, drizzle in lemon juice and olive oil and season with salt, to taste. Process until sauce is the consistency of a dip. Thin down with a reserved liquid, if needed. Chill until needed.

3) Heat a grill pan over medium heat. Remove chicken from its marinade and grill until cooked through. Set aside to rest.

4) Divide lettuce among 4 bowls. Chop chicken into chunks and use to top each bowl. Serve with garlic sauce on the side or drizzle over each bowl.

Breakfast Smoothie

* ½ cup Romaine lettuce, torn
* ½ cup spinach or kangkong leaves
* 1 piece small banana or ½ big banana (lakatan variety)
* ½ cup apple, peeled, de-seeded and diced
* 2 tbsp rolled oats
* 1 tbsp flaxseeds (optional)
* 2 tbsp coconut sugar
* ½ cup plain yogurt
* ¼ cup coconut water or water
* 1 cup ice cubes

* In a blender, puree all ingredients until smooth.


Compiled Recipe- Dulce De Leche Yogurt

Dulce De Leche Yogurt

*1 cup plain or Greek yogurt
* ¾ cup store bought dulce de leche
* 1/8 cup milk
* ¼ tsp instant coffee granules
* 1/8 tsp salt

1) Combine yogurt, store bought dulce de leche, milk, instant coffee grounds, and salt in a bowl. Mix well until smooth.

2) Divide mixture among 4 popsicle molds. Freeze for 30 minutes, insert popsicle sticks, then freeze for at least 4 hours. Remove from molds and drizzle with more dulce de leche. Serve immediately.
