Compiled Recipe – BLT Pasta Salad

BLT Pasta Salad

* 2 ½ cups bow tie pasta
* 6 cups Romaine lettuce (torn)
* 1 medium tomato (diced)
* 4 bacon strips (cooked an crumbled)
* ½ cup ranch dressing
* 1 tbsp. barbecue sauce
* ¼ tsp pepper

1) Cook pasta according to package directions. Drain. Then rinse pasta under cold water.

2) In a large bowl, combine the romaine lettuce, tomato, bacon and pasta.

3) Drizzle the ranch dressing and barbecue sauce over the top. Gently toss to coat evenly. Season with pepper. Serve immediately and enjoy!



Compiled Recipe – Pierogi Soup

Pierogi Soup

* 4 cups low sodium chicken broth
* 1 can diced tomatoes
* 1 package potato (mini and onion pierogis)
* 6 ounces green beans
* ½ pound kale (or spinach)
* grated parmesan

1) In a saucepan, bring chicken broth and diced tomatoes (including juices) to a boil.

2) Add mini potato and onion pierogies; return to a boil. Add green beans and simmer for 3 minutes.

3) Stir in kale or spinach and cook until just wilted. Serve with Parmesan.



Compiled Recipe – Adobong Sitaw

Adobong Sitaw

* 2 tbsp oil
* 2 cloves garlic, chopped
* 1 medium onion, chopped
* 1 medium tomato, chopped
* ¼ kilo pork kasim, cubed
* ½ kilo sitaw (string beans), cut into 2 inch pieces
* 1 cup soy sauce
* pepper (to taste)
* salt (to taste)

1) Sauté the garlic in oil until golden brown. Add the onions and cook until translucent. Then add the tomatoes and pork cubes and soy sauce. Simmer for 10 minutes or until the pork is cooked.

2) Add the sitaw and cook for 5 minutes or until the sitaw is cooked. Season with salt and pepper.


Compiled Recipe – Spaghetti and Meatballs

Spaghetti and Meatballs

* 3 slices bread, made into breadcrumbs
* 1/3 cup fresh milk, or as needed
* 1 (500 gram) pack spaghetti noodles
* 3 tbsp olive oil
* 1 medium white onion, peeled, chopped
* 2 tbsp tomato paste
* 1 (800 gram) can whole peeled tomatoes
* ¼ kilo ground pork
* ¼ kilo ground beef
* 4 slices bacon, chopped
* 1/3 cup parsley leaves, chopped
* 1 large egg
* 1 cup parmesan cheese, grated
* salt (to taste)
* ground black pepper (to taste)
* oil (for deep frying)

1) In a large wet breadcrumbs with milk. Set aside. Cook spaghetti according to package directions. Drain. Keep warm.

2) Meanwhile, heat olive oil in a sauté pan over medium heat. Sauté onion until translucent. Transfer half the onions to the bread mixture. Stir tomato paste into the pan. Add tomatoes, breaking up the fruit. Stir tomato paste into the pan. Season with salt and ground black pepper to taste. Set aside.

3) Prepare pot for deep frying. Then, mix wet breadcrumbs (will look like paste) , onions, ground meats, bacon, parsley, egg and Parmesan cheese. Test for seasoning by cooking a small portion; adjust as needed. Using an ice cream scoop, make 20 2-inch round meatballs. Deep fry meatballs until browned. Drain on a rack over paper towels.

4) Toss cooked spaghetti with tomato sauce. Serve with meatballs.



Compiled Recipe – Chicken Barbecue with Peanut Sauce

Chicken Barbecue with Peanut Sauce

* 500 grams chicken thigh fillets, cubed
* salt and pepper (to taste)
* ¼ cup bottled Asian dressing
* ¼ cup peanut butter
* cilantro (for garnish)

1) Season chicken thigh fillets with salt and pepper. Thread chicken onto sewers, 3 to 4 pieces per stick. Marinate in bottled Asian salad dressing for 30 minutes. Grill skewers over high heat, about 2 minutes per side.

2) Mix peanut butter and bottled Asian dressing. Dilute with water, if needed. Drizzle over skewers. Garnish with cilantro (wansoy) leaves.




Compiled Recipe – Tomato and Longganisa Pasta

Tomato and Longganisa Pasta

* 4 pcs longganisa, diced
* 3 pcs medium tomato, seeded and diced
* 3 small cloves garlic, crushed and minced
* 2 tbsp olive oil or melted butter
* ½ cup coarsely chopped parsley
* salt and pepper
* 200 grams spaghetti, macaroni or fettucine pasta

1) Cook pasta until al dente.

2) In a pan, heat up butter. Sauté garlic, tomatoes and longganisa until cooked.

3) Add the cooked pasta.

4) Sprinkle chopped parsley and serve.
