No Cook Tuna Tacos

Ingredients:
* 2 (95 gram) cans tuna flakes, in vegetable oil, drained
* 1 tsp sweet paprika
* 1 tsp sugar
* 2 tbsp taco seasoning
* 1 medium head iceberg lettuce, julienned
* 1 medium red onion, chopped finely
* 6 medium tomatoes, cored and chopped finely
* 1/3 cup cheddar cheese, grated
* 12 crunchy taco shells

Preparations:
1) Make the tuna filling: Mix together tuna flakes, sweet paprika, sugar and taco seasoning in a bowl until well combined.

2) Assemble the tacos: Evenly divide tuna filling, iceberg lettuce, red onion, tomatoes and cheddar cheese among crunchy taco shells. Serve immediately.

Compiled Recipe – Mexican Taco Rice

Mexican Taco Rice

Ingredients:
* 2 tbsp canola oil
* 1 medium red onion, peeled , sliced
* 2 cloves garlic, peeled, chopped
* 3 tomatoes, chopped
* ½ kilo ground beef
* 1 pack taco seasoning (around 40 grams)
* 1 tsp Spanish paprika
* 1 pack black beans (around 100 grams), rinsed drained
* 1 can red kidney beans (around 400 grams), drained
* 1 can sweet kernel corn (around 425 grams), drained
* ½ cup water
*  3 cups day old rice
* 1 small head iceberg lettuce, shredded
* 1 quick melt cheese, grated
* salt (to taste)
* ground black pepper (to taste)

Preparations:
1) In a large saute pan over medium heat, Saute onion , then garlic and finally, tomatoes until softened.

2) Add ground beef. Let brown before stirring. Once cooked through, remove excess fat from the pan. Stir in taco seasoning and paprika and season to taste.

3) Add both beans and corn. Pour in water. Let simmer until almost dry. Toss in rice. Stir in cheese and lettuce before serving.

Compiled Recipe – Cheesy Enchilada Casserole

Cheesy Enchilada Casserole

Ingredients:
* ½ kilo ground beef
* 3 tbsp taco seasoning (use McCormick)
* 4 pieces flour tortillas (6-inch)
* 1 cup canned pork and beans, drained and sauce reserved for topping
* 1 cup quick-melting cheese, grated
* ½ cup cheddar cheese, grated

Preparations:
1) Combine ground beef and taco seasoning in a bowl. Sauté beef in a pan until brown; set aside.

2) Pre-heat oven to 350˚F.

3) Lay 1 tortilla on a small plate. Place 2 to 3 tablespoons cooked beef on top. Top with 3 to 4 tablespoons pork and beans. Roll tightly into a log. Repeat with remaining ingredients.

4) Arrange rolled tortillas on a 6×6-inch baking dish. Drizzle top with reserved pork and beans sauce and sprinkle cheeses over the tortillas.

5) Bake in the pre-heated oven for 20 minutes or until cheese is melted. Serve immediately.
