Compiled Recipe – Cheescake Milkshake

Cheesecake Milkshake

Ingredients:
* 1/3 cup cream cheese (softened, to soften it, quickly put it on defrost in the microwave for 5 seconds at a time)
* 2 tbsp. Greek yogurt or sour cream
* 2 tbsp. sugar
* 1 egg
* ¼ tsp. vanilla
* pinch salt
* 1 tbsp. strawberry jam
* ½ tsp. water
* 1 cup ice cream
* 2 tbsp. milk
* 1 sheet graham crackers (i.e. four connected crackers)
* just one little sheet of 4 connected crackers
* 3 tbsp. whipped cream
* a strawberry

Preparations:
1) In a small microwave-safe bowl use a fork to whisk together the cream cheese, Greek yogurt, sugar, egg, vanilla and pinch of salt. Try to get most of the lumps of cream cheese smooth but it’s OK if some remains.

2) Cover it with plastic wrap, leaving a small gap for steam to escape, and microwave on high for 1 minute. Then microwave for 20 seconds at a time until the center is mostly cooked. It can still jiggle a little. Remove from microwave and let it cool.

3) Meanwhile, put the jam in a small microwave-safe bowl and warm it for 15 seconds or so. Stir in the water. Set aside.

4) Into the blender, put the ice cream, milk, 1/2 of the sheet of graham crackers and your cheesecake base. Blend. Pour it into a glass. Top with the whipped cream and then drizzle with the strawberry jam. Crumble your remaining half sheet of crackers over top. Plop on the strawberry. Drink!

Compiled Recipe – Strawberry S’mores

Strawberry S’mores

Ingredients:
* 8 graham crackers, squares
* 3 tbsp. strawberry jam
* 4 large marshmallows, cut in half crosswise
* 8 squares chocolates or chocolate-covered macadamias

Preparations:
1) Pre-heat a toaster oven. Line baking sheet with foil.

2) Arrange graham crackers on baking sheet. Spread 1 tablespoon strawberry jam on each cracker.

3) Place a marshmallow, cut side down,  on top of each cracker. Bake in the pre-heated toaster oven for 1 ½ minutes.

4) Remove pan from oven. Place a chocolate square on top of each marshmallow, pressing down slightly. Return to the toaster oven and continue baking until chocolate is melted and marshmallows are slightly browned, about 2 to 2 ½ minutes. Serve immediately.

Compiled Recipe – Strawberry Cream Cheese Fudge Brownies

Strawberry Cream Cheese Fudge Brownies

Ingredients:
* 8 tbsp cocoa powder
* 1 cup margarine
* 2 cups granulated sugar
* 4 eggs
* 1 tsp vanilla extract
* 2 ½ cups all purpose flour
* salt
* 2 packs of Arla Lactose free Fresh Cream Cheese
* 1 tsp vanilla extract
* 2 cups powdered sugar
* ½ cup strawberry jam

Preparations:
1) Melt margarine in a pan over medium heat, stir in cocoa until well incorporated.

2) In a separate bowl, mix sugar and eggs, then add the margarine and cocoa mixture.

3) Stir in vanilla, flour, nuts and salt.

4) Pour in a 9″ by 13″ greased baking pan and bake for 25 to 30 minutes in a preheated oven at 325 degrees.

5) To make the frosting, mix cream cheese and margarine until very creamy.

6) Add vanilla and gradually stir in powdered sugar.

7) Fold in strawberry jam.

8) Spread over cooled brownies.

Compiled Recipe – Mango Oat Bars

Mango Oat Bars

Ingredients:
* 1 cup all purpose flour
* 1 cup instant oats
* ¾ cup brown sugar
* ¼ tsp salt
* ¼ tsp ground cinnamon
* 1/3 cup butter
* ¾ cup strawberry jam
* ¾ cup dried mangoes, chopped

Preparations:
1) Pre-heat oven to 350˚F. Line a 9-inch square baking pan with parchment paper; set aside.

2) Combine flour, oats, brown sugar, baking soda, salt and cinnamon in medium bowl; mix well.

3) Add butter. Stir with fork or gently rub butter and flour mixture with your fingers until crumbly. Reserve ½ cup of this mixture for topping.

4) Press flour-butter mixture evenly on the bottom of the pan.

5) Spread strawberry jam evenly.

6) Sprinkle chopped dried mangoes on top.

7) Sprinkle reserved flour-butter mixture.

8) Bake for 20 to 25 minutes in the pre-heated oven. Transfer pan to a rack and let cool completely. Remove from pan and cut into squares. Store in an air-tight container at room temperature for 3 days or in the refrigerator for 7 days.
