Compiled Recipe – Chicken Omelet

Chicken Omelet

Ingredients:
* 1 fillet chicken breast
* ¼ tsp salt
* ¼ tablespoon and 1 teaspoon salt and cracked black pepper
* 1 tbsp oil
* 3 eggs
* 1 tbsp basil, minced
* ¼ cup quick melting cheese
* 2 tbsp store bought tomato salsa

Preparations:
1) Flatten chicken breast fillet with a meat mallet until even in thickness. Season with salt and ground black pepper or to taste.

2) Heat oil in a nonstick frying pan over medium heat. Pan fry chicken until cooked through. Remove from heat and let rest. Slice into strips and set aside.

3) Beat eggs in a bowl. Add basil leaves. Season with salt and ground black pepper to taste. Pour into hot non stick pan , and using a spatula, tilt pan while stirring only until eggs are just beginning to set. Fill one side of the omelet with cheese, chicken strips and prepared tomato salsa. Fold omelet in half and slide to a plate to serve immediately with hot pandesal.

Potato Salad with Nachos

Ingredients:
* ¾ kilo potatoes, cubed and deep fried
* ¼ cup cheese spread
* ¼ cup cheddar cheese, grated
* ¼ cup mayonnaise
* ¼ cup salsa, prepared or store-bought
* ½ cup sweet corn
* ¼ cup black beans, rinsed and drained
* ½ cup corn chips, crushed
* 1 tbsp cilantro, chopped fresh

Preparation:
* Toss potatoes with cheese spread, cheddar cheese, mayonnaise, salsa, sweet corn and black beans; serve topped with corn chips, cilantro and more salsa.

Fiver Layer Chip Dip

Ingredients:
* ½ cup refried beans, canned
* 1/3 cup corn kernels, canned, drained
* ½ cup salsa, store-bought
* ¼ cup sour cream
* 1/3 cup cheddar cheese, grated

Preparation:
* Place refried beans in a medium glass serving bowl; smoothen top. Top with even layers of corn kernels, store-bought salsa, sour cream and cheddar cheese. Serve with nachos or tortilla chips.

Avocado and Balsamic Salsa

Ingredients:
* ½ tbsp balsamic vinegar
* 1 ½ tbsp olive oil
* salt
* pepper
* 1 small avocado, diced
* diced tomatoes (optional)

Preparations:
1) Whisk balsamic vinegar and olive oil in a small bowl to combine. Season with salt and pepper; set aside.

2) Place diced avocado in a bowl ; add balsamic vinaigrette. For more color, add diced tomatoes and mix gently.
