Hot Chocolate Cheesecake Dip

Ingredients:
* 8 ounces cream cheese
* ½ cup plain greek yogurt
* ½ cup marshmallow crème
* 1 cup hot chocolate mix (powdered Swiss Miss Dark Sensation)
* ¾ cup cool whip (divided)
* mini marshmallow (for garnish)
* candy canes (crushed, for garnish)
* crackers
* cookies
* pretzels

Preparations:
1) Beat the cream cheese until creamy. Add the yogurt, marshmallow cream, and hot chocolate mix and beat again until light and fluffy. Fold in 1/2 cup Cool Whip gently until completely mixed in.

2) Top with remaining Cool Whip, mini marshmallows, and crushed candy cane.

3) Serve with cookies and pretzels. Keep refrigerated in a covered container. Makes about 2 cups.

Tasty Tandoori Grilled Chicken

Ingredients:

(Marinade)
* ¾ cup (175 mL) plain yogurt
* 1 ½ slice (7 mL) garam masala spice
* ½ tsp. (2 mL) turmeric
* 3 cloves garlic, minced
* 1 tbsp. (15 mL) finely grated ginger
* ¼ tsp. (1 mL) salt
* freshly ground pepper

(Chicken)
* 1 lb. (500 grams) boneless, skinless chicken breasts
* ¼ tsp. (1 mL) each , salt and cayenne pepper
* 3 tbsp. (45 mL) lemon juice, about 1 lemon

(Peach Salsa)
* 2 peaches, pitted and cut into ½-inch (1 cm) pieces
* 2 tbsp. (30 mL) red pepper, finely chopped
* 2 tbsp. (30 mL) red onion, finely chopped
* ¼ tsp. (1 mL) each, hot red chili flakes and salt
* 2 tbsp. (30 mL) lime juice
* 1 tbsp. (15 mL) finely chopped fresh coriander

Preparations:
1) Marinade: In a medium bowl, stir yogurt with garam masala, turmeric, garlic, ginger, salt and pepper.

2) Chicken: Place chicken in a dish just large enough to hold it. Using a sharp knife, make a few shallow slashes in each piece of chicken to allow marinade to penetrate. Sprinkle with salt and cayenne. Sprinkle lemon juice over chicken, trying to get it into slashes. Pour yogurt marinade over chicken, turning to coat. Cover, refrigerate and marinate for at least 2 hours, but preferably overnight.

3) Peach Salsa: Place chopped peaches in a bowl along with red pepper, onion, chili flakes and salt; stir. Add lime juice and coriander. Refrigerate if not using right away.

4) Grease grill and preheat barbecue to medium-high. Remove chicken from yogurt mixture, leaving any yogurt clinging to it. Place on grill. Barbecue for 10 to 13 min, turning occasionally, brushing frequently with leftover marinade and moving to a cooler side of grill if needed, until chicken is cooked through. Serve with peach salsa.

Chicken Shawarma

Ingredients:
* ½ cup plain yogurt
* 1 clove garlic, chopped finely
* 1/8 tsp. pepper
* 1/8 tsp. sea salt
* ½ tsp. ground allspice
* 1 tbsp. lemon juice
* 300 grams chicken breast fillets, sliced into 3 x ½ -inch strips
* 1 tsp. canola oil
* 4 (6 inch) tortillas, warmed
* 80 grams cucumber, peeled and sliced thinly
* 40 grams tomatoes, peeled and sliced thinly
* 5 grams parsley, finely chopped
* 1/8 tsp. paprika
* ¼ tsp. lemon zest
* 1 ½ tbsp. mango puree
* 2 tbsp. low fat mayonnaise
* 1 tbsp. yogurt
* ½ tbsp. crunchy peanut butter
* 1 small clove garlic

Preparations:
1) Combine yogurt, garlic, pepper, salt, allspice and lemon juice in a bowl; mix well. Add chicken and marinate for at least 2 hours.

2) Heat oil in a pan. Sauté chicken for 10 to 12 minutes or until done. Divide into 4 portions; set aside.

3) Make the vegetable filling: Combine all ingredients in a bowl. Divide into 4 portions; set aside.

 

4) Make the mango-garlic sauce: Combine all ingredients in a food processor or blender. Process until smooth.

5) To assemble: spoon 1 portion chicken and vegetable filling on a tortilla. Drizzle mango-garlic sauce on top. Fold sides of tortilla and secure with a toothpick or wrap shawarma in foil. Repeat with remaining ingredients.

Compiled Recipe – Coffee Granola Parfait

Coffee Granola Parfait

Ingredients:
* 1 pack instant coffee
* 2 cups hot water
* 1 cup granola
* 1 cup plain yogurt
* 1 tbsp sugar
* ½ tsp vanilla

Preparations:
1) In a bowl, dissolve instant coffee mix in the water. Set aside. Once cool, toss granola in coffee. Set aside.

2) Meanwhile, mix yogurt, sugar and vanilla in a bowl until sugar is dissolved. Set aside.

3) To serve, drain granola and then place a tablespoonful of granola in the bottom of a dessert glass. Cover with yogurt. Layer again with granola, yogurt, granola and a final dollop of yogurt. Serve immediately.

Queso De Bola Biscuits

Ingredients:
* 1 ½ cup flour
* ½ tbsp. baking powder
* ½ tsp baking soda
* ¼ tsp salt
* ¼ tsp ground black pepper
* ½ tsp sugar
* 1/3 cup butter, frozen
* ½ cup queso de bola, grated
* ½ cup plain yogurt, chilled
* ¼ cup milk, chilled
* ¼ cup butter, melted
* 2 tbsp parmesan cheese
* 2 tbsp parsley, chopped

Preparations:
1) Pre-heat oven to 375◦F. In a large bowl, mix flour, baking powder and soda, salt, sugar and pepper. Toss in frozen butter and cheese into flour mixture. Beat yogurt and milk together. Fold into butter-flour mixture only until wet.

2) Using an ice cream scooper, spoon onto a non-stick baking sheet, leaving about 2 inches between each biscuit. Brush tops with melted butter, and top with parmesan cheese and parsley. Bake until biscuits are browned and cooked through. Serve hot with pastel.

Beef Shawarma Rice

Ingredients:
* 1 tsp ground cumin
* ½ tsp ground turmeric
* 1 tsp salt
* ½ tsp ground black pepper
* 1 pack plain yogurt, around 125 grams
* 1 kilo beef, use beef sirloin, sliced thinly
* 2 tbsp vegetable oil
* steamed rice (to serve)
* 1 head lettuce, shredded
* 4 medium tomatoes, sliced and seeded
* 3 medium white onions, sliced

Preparations:
1) Combine cumin, turmeric, salt, pepper and yogurt in a bowl. Add beef and mix. Marinate for 10 to 15 minutes.

2) Heat oil in a pan over medium heat. Sauté beef. Add marinade and simmer for 10 minutes or until sauce is reduced by half.

3) Portion rice among bowls. Top with lettuce, onions and beef.

Crispy Baked Chicken

Ingredients:
* olive oil (to grease)
* ½ cup plain yogurt
* 1 tsp salt
* ½ tsp each black pepper
* 1 tbsp garlic, crushed
* 1 kilo chicken breast fillets
* ½ cup all purpose flour
* 1 tsp sweet paprika
* 2 large eggs, beaten lightly
* 2 cups cornflakes, crushed

Preparations:
1) Pre-heat oven to 350˚F. Line and grease a baking sheet with olive oil.

2) Combine yogurt, salt, pepper and garlic in a bowl. Add chicken and marinate, covered, in the refrigerator for 30 minutes or overnight.

3) Combine flour and paprika in a bowl. Dredge chicken in flour mixture, then dip in egg. Dredge in cornflakes until well coated. Arrange on baking sheet.

4) Bake in the pre-heated oven until crisp and golden, about 25 to 30 minutes.

Compiled Recipe- Mango Yogurt Cup

Mango Yogurt Cup

Ingredients:
* 1 cup rolled oats
* ¼ cup almond slivers, toasted
* ¼ cup cashew nuts, toasted
* ¼ cup honey
* 2 tbsp brown sugar
* 3 tbsp vegetable oil, plus more to grease
* 2 tbsp dried coconut, shredded
* 2 tbsp dried mangoes,  sliced thinly
* 1 cup plain yogurt
* ½ cup coconut cream, store-bought
* 3 tbsp brown sugar
* fruits in season, cubed

Preparations:
1) Pre-heat oven to 350˚F. Grease a baking pan with oil.

2) Make the coco-mango granola: Combine oats and nuts in a bowl. Set aside.

3) Combine honey, sugar and oil in a microwaveable bowl. Heat in 30 second intervals on medium power until sugar is melted. Pour over oat mixture. Spread mixture on baking pan.

4) Bake in the pre-heated oven until golden and crispy, about 10 to 15 minutes. Let cool for 5 minutes before adding dried coconuts and mangoes.

5) Make the coconut yogurt: Combine all ingredients in a bowl; mix until well combined. Adjust sweetness to taste.

6) Assemble the parfait: Fill glass halfway with yogurt. Top with ¼ cup granola and fruits. Repeat to make  3 more parfaits.

Strawberry and Toasted Marshmallow Milkshake

Ingredients:
* 3 large marshmallows
* 1 cup Arla Milk Goodness
* 1 cup strawberry ice cream
* 1 tbsp plain yogurt

Preparations:
1) Using a toaster, toast all marshmallows until charred. Freeze the charred marshmallows afterwards.

2) Combine ½ cup Arla Milk Goodness Strawberry and frozen toasted marshmallows in a blender. Blend until they are as pureed as you can get them or preferred.

3) Add remaining Arla Milk Goodness Strawberry , strawberry ice cream and yogurt; blend until combined.

4) Transfer to a glass and top with more toasted marshmallows.
