No Bake Banana Cake

* ¾ cups whole milk
* ½ tbsp. lemon juice
* 1 ½ cup all-purpose flour
* ½ tsp. baking powder
* ½ tsp. baking soda
* ¼ tsp. salt
* ¼ cup plus 2 tbsp. butter, unsalted
* ¼ cup brown sugar, packed
* ½ cup white sugar
* 3 medium eggs
* 1 ½ tsp. vanilla extract
* 1 cup ripe bananas, mashed (lakatan variety)

1) Combine the milk and the lemon juice, mix and let sit for 10 minutes. Set aside.

2) In a bowl, combine flour, baking powder, baking soda, and salt, whisk well and set aside.
In another bowl, cream the butter and both sugars until well incorporated. Add the eggs one by one. Add the vanilla and the mashed bananas and mix well.

3) Add the flour mixture in batches, alternating with the milk mixture. Fold in 1/2 cup chopped walnuts.

4) Pour the batter into a 6-inch cake pan and cover with aluminum foil. Steam for 1 hour or until cooked. Let cool before serving. Top with caramelized bananas (optional).

Banana Nutella Muffins

* 3 large bananas (lakatan variety)
* ½ cup strong coffee
* ½ cup brown sugar
* ¼ cup sugar
* 1/3 cup vegetable oil
* 1 large egg
* 1 tsp vanilla extract
* 1 ¾ cup all purpose flour
* 1 tsp baking powder
* ½ tsp baking soda
* ½ tsp salt
* ½ tsp ground cinnamon
* ¾ cups chocolate hazelnut spread (use Nutella)
* ¼ cup all purpose flour
* ¼ cup quick cooking oats
* 2/3 cup brown sugar, packed
* 1 tsp salt
* ¼ cup unsalted butter, cubed, chilled

1) Pre-heat oven to 350◦F. Line regular muffin pans with cupcake liners.

2) Mash bananas in a bowl then pour in coffee; allow to soak for at least 10 minutes. Set aside.

3) Make the oatmeal crumble: Mix flour, oats, sugar and salt in a bowl. Cut in butter using a fork or your fingers, just until mixture resembles coarse sand. Set aside.

4) Using a wooden spoon, mix sugars and oil in a large bowl until well combined. Add egg, vanilla and banana mixture; mix until well combined. Fold in dry ingredients and mix until combined; do not overmix. Using the tip of a knife, swirl in chocolate hazelnut spread.

5) Pour batter into a prepared pan then sprinkle with oatmeal crumble on top. Bake for 25 minutes or until a toothpick inserted in the muffins comes out clean.

Banana Berry Smoothie

* 1 large banana, lakatan variety, frozen
* ¼ cup blueberries, frozen
* ¼ cup soy milk
* ¼ cup unsweetened apple juice
* ice cubes

* Whiz banana, blueberries, soy milk, unsweetened apple juice and a handful ice cubes in a blender until smooth. Pour into a tall glass and serve.

Banana Cake with Salted Caramel Cream Cheese Frosting

* 5 large bananas, very ripe, lakatan variety
* 2 cups all purpose flour
* 1 tsp baking soda
* ½ tsp salt
* ¾ cup sugar
* ¾ cup brown sugar
* ½ cup vegetable oil
* 2 large eggs
* ½ cup sour cream
* 1 tsp vanilla extract
* 1 cup cream cheese, softened
* ¾ cup unsalted butter, softened
* 2 ½ cups confectioners’ sugar
* 1 tsp vanilla extract
* 1 tsp ground cinnamon
* ¼ cup store bought salted caramel sauce
* ½ cup store bought salted caramel sauce
* ½ cup banana chips, store bought
* ¼ cup walnuts, toasted

1) Pre-heat oven to 350◦F. Grease and flour 2 (7-inch) round cake pans.

2) Mash bananas with a fork until soft but still chunky. Sift together flour, baking soda and salt into a bowl. Set aside.

3) In the bowl of an electric mixer fitted with the paddle attachment, mix bananas and sugars on low speed until well combined. Add oil, eggs, sour cream and vanilla. Mix on low speed until smooth. Add flour mixture until combined.

4) Divide batter evenly between prepared pans. Bake in the pre-heated oven for 40 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pan for at least 15 minutes. Turn out onto a wire rack and cool completely.

5) Make the frosting: In the bowl of an electric mixer fitted with the paddle attachment, mix cream cheese and butter on medium low speed until smooth. Add sugar and mix until well combined. Add vanilla, cinnamon and salted caramel sauce. Mix until well combined. If frosting is too soft, chill before frosting the cake.

6) Level off each cake layer by cutting the domed top with a serrated knife. Using an offset spatula or the back of a spoon, spread a generous amount of frosting on one layer, then top with the other cake layer. Use the rest of the frosting to cover the cake. Spread caramel sauce on top of the cake (Note: To create the drips, use a spoon to spread the caramel over the edge of the cake.) Arrange banana chips on the center and sprinkle walnuts on top.

Oatmeal Pancakes

* ¾ cup rolled oats
* 2 bananas, lakatan variety
* 2 large eggs
* ½ tsp baking powder

1) Combine rolled oats, bananas, eggs and baking powder in a blender; whiz until well combined.

2) Heat a slightly greased pan over medium heat. Pour in batter and swirl pan to form a circle. Cook until light brown, about 45 seconds per side. Repeat with the rest of the batter. Serve with sliced bananas and maple syrup, if desired.
