Spicy Kimchi Butter

* 1 cup unsalted butter, at room temperature
* ¾ cup kimchi, roughly chopped
* 1 tbsp chili flakes or gochugaru
* 1 tsp Korean chili paste (gochujang)
* ½ tsp salt

1) Pulse butter, kimchi, Korean chili flakes (gochugaru), Korean chili paste (gochujang) and salt in a food processor until smooth.

2) Transfer to an air-tight container; chill. Use to make kimchi rice or serve with steak.

Kimchi and Spam Fried Rice

* 2 tbsp canola oil
* 1 medium red onion, peeled and sliced
* 1 (400 gram) can button mushrooms, sliced and drained
* ½ cup kimchi, roughly chopped
* 2 tbsp kimchi, liquid only
* 1 ½ tbsp gochujang
* ¼ cube chicken bouillon
* ½ cup water
* 3 cups brown rice, and red rice, day-old
* 1 cup frozen green peas, thawed
* 1 cup nori, sliced into strips
* salt (to taste)
* ground black pepper (to taste)

1) In a large wok over medium heat, heat oil. Add onion and cook until translucent. Add mushrooms, then Spam , cooking until each is heated through.

2) Add kimchi, kimchi liquid, gochujang, bouillon cube and water. Stir to mix and dissolve bouillon cube into the mixture. Add rice and toss to coat.

3) Add green peas and toss to mix. Once peas are heated through, stir in nori then season with salt and pepper, to taste, and serve immediately.

Kimchi Fried Rice

* 1 tbsp vegetable oil
* 6 slices bacon, chopped
* ¾ cup kimchi, chopped
* 3 cups cooked rice
* 1 tbsp kimchi juice (optional for heat)
* salt and pepper (to taste)
* nori strips (for garnish)

1) Heat vegetable oil in a frying pan or wok. Cook the bacon until brown.

2) Add kimchi and sauté for a few minutes.

3) Add cooked rice and toss to combine.

4) Season with kimchi juice, salt, and pepper. Toss to combine.

5) Top with nori strips.

Food Review: Jang Ga Nae

One of the newest Korean restaurant here in Manila, Jang Ga Nae serves mouth-watering Korean dishes that guests wanted to try in Korea itself. There are salad vinaigrette, kimchi , watered down kimchi pancake, soup, beef short ribs, beef ribs soup and other Korean dish to try out.

I tried out this Korean restaurant with my school friends last Thursday night which was also one of my friends’ birthday. As a treat, she took us here to try Korean dishes and so far, they tasted good, even the soup. I also loved the strawberry smoothie I ordered. Too bad I wasn’t able to taste the kimchi pancake as my stomach was already full. If given the chance to pay another visit at this restaurant, I would love to try another one of their dishes.
