Compiled Recipe – Ginataang Manok with Luyang Dilaw

Ginataang Manok with Luyang Dilaw

Ingredients:
* 3 tbsp. cooking oil
* 1 medium red onion, sliced
* 2 pieces turmeric, sliced
* 1 (1-inch) ginger, sliced
* 1 kilo whole chicken, cut into pieces
* 2 cup coconut cream
* 3 pieces green chilies (siling pangsigang), sliced
* salt (to taste)
* pepper (to taste)

Preparations:
1) Pre-heat oil in a medium pot and sauté onion, turmeric and ginger. Add the chicken and cook for 10 minutes or until lightly browned.

2) Add the coconut cream and green chili. Let it simmer over medium heat for 15 minutes or until the sauce is thick.

3) Season with salt and pepper. Serve warm.

Compiled Recipe – Pork Dinuguan (Pork Blood Stew)

Pork Dinuguan (Pork Blood Stew)

Ingredients:
* 1 tbsp cooking oil
* 1 tbsp garlic chopped
* 1 medium sized onion, chopped
* 1 kilo pork (use pork belly or pork loin), cut into cubes
* 1 kilo pork blood
* 1 cup vinegar
* 1 cup water
* 2 pieces long green chilies (siling pangsigang)
* 2 tbsp. brown sugar
* salt (to taste)
* pepper (to taste)

Preparations:
1) Sauté the garlic and onion in pre-heated oil until translucent.

2) Add the pork and cook until some of the fat from the pork has rendered.

3) Add water, vinegar and the pork blood. Simmer until thick or for 30 minutes.

4) Add in the long green chilies and sugar. Season with salt and pepper Let it simmer over low flame for 15 minutes. Serve warm.

Compiled Recipe – Binagoongang Manok

Binagoongang Manok

Ingredients:
* 3 tbsp canola oil
* 600 grams chicken, cut into serving pieces
* 1 medium onion, quartered
* 1 tbsp garlic, chopped
* 2 medium tomatoes, quartered
* 3 tbsp shrimp paste, or bagoong alamang
* 2 tsp white vinegar
* 1 tsp white sugar
* 1 to 2 pieces green chilies (siling pangsigang)
* ground black pepper (to taste)
* ½ cup okra, sliced

Preparations:
1) Heat oil in a wok over medium heat. Fry chicken for 4 to 5 minutes per side or until light golden brown in color. Remove chicken from the wok and let drain on paper towels. Option to remove excess oil from pan and just leave about 2 tablespoons.

2) In the same wok, sauté onions, garlic, tomatoes and shrimp paste for 1 to 2 minutes. Pour in the vinegar and let simmer for one minute. Bring the chicken back to the wok, together with the sugar and sili ; mix well. Simmer further if needed. Season to taste. Place cooked chicken on a serving platter. Cook the okra in the same wok for 1 minute then place on top of chicken.
