Compiled Recipe – Spicy Chicken Wings

Spicy Chicken Wings

* ½ kilo chicken wings
* ¾ cup bottled teriyaki marinade
* 3 tbsp. sriracha

* Toss together chicken wings, store-bought teriyaki marinade and Asian chili sauce (use sriracha) in a medium bowl until the wings are well coated. Place the wings on a lightly greased baking sheet and bake in a 350◦F oven for 20 to 25 minutes or until cooked through.





Compiled Recipe – Adobo Chicken Wings

Adobo Chicken Wings

* 1 kilo chicken wings
* 2 tbsp Worcestershire sauce
* ¼ cup soy sauce
* ¼ cup white vinegar
* ¼ cup water
* 2 tbsp garlic, chopped
* 1 tbsp jalapeños, canned, chopped
* 1 bay leaf
* ¼ cup atsuete oil

1) Combine all ingredients, except atsuete oil, in a clay pot or deep, heavy bottomed casserole over medium high heat. Simmer for 15 to 20 minutes. Strain and reserve liquid.

2) Combine reserved liquid and atsuete oil in a bowl.

3) Pre-heat a charcoal grill. Grill chicken for 8 to 10 minutes per side, basting frequently with atsuete mixture. Serve immediately.


Compiled Recipe – Salted Egg Yolk Chicken Wings

Salted Egg Yolk Chicken Wings

* vegetable oil (to deep fry)
* 12 chicken wings
* salt (to taste)
* ground black pepper (to taste)
* 1/3 cup all purpose flour
* 1 tsp baking powder
* 3 tbsp butter
* 1 tbsp garlic, minced
* 1 bird’s eye chili, seeded and chopped
* 20 curry leaves or basil leaves
* 4 salted egg yolks, mashed
* 1 tsp yellow curry powder
* 1 tsp sugar

1) Pre-heat oil in a deep pan over high heat. Season chicken with salt and pepper.

2) Combine flour and baking powder. Dredge chicken in mixture. Deep fry until golden. Drain on wire rack.

3) Make the sauce: Heat butter in a pan over medium heat. Sauté garlic, chilies and curry leaves. Add salted egg yolks, curry powder and sugar.

4) Toss in chicken wings and mix until coated.



Compiled Recipe – Parmesan Stuffed Chicken Wings

Parmesan Stuffed Chicken Wings

* 12 pieces chicken, use wings, bones of drumettes removed and bones of wings left on
*  1 tsp salt, divided
*  1 tsp pepper, divided
*  1 cup parmesan cheese, grated or powdered
*  ½ cup mozzarella cheese, grated
*  1 tbsp dried tarragon
*  1 tbsp dried thyme leaves
* 3 tbsp butter, softened
* 2 cups all purpose flour
* vegetable oil (to deep fry)

1) Season chicken wings with ½ tsp salt and ½ tsp pepper. Cover and keep in the refrigerator overnight.

2) Mix parmesan cheese, mozzarella cheese, tarragon, thyme and butter in a bowl. Stuff mixture into the drumettes. Refrigerate until dry.

3) Place flour in a bowl. Season with remaining salt and pepper. Dredge chicken wings in seasoned flour.

4) Heat oil in a deep pot. Deep-fry chicken wings until golden brown, about 5 minutes , making sure not to turn the wings too often to keep the stuffing intact. Drain on paper towels.

Chili Soy Chicken Wings

* 2 tbsp vegetable oil
* 500 grams chicken wings
* salt
* pepper
* ¼ cup soy sauce
* ¼ cup ketchup, hot and spicy flavored
* 2 tbsp honey

* Heat vegetable oil in a deep frying pan over medium heat. Season chicken wings with salt and pepper. Deep fry until golden brown, about 8 minutes. Drain on a wire rack.


Compiled Recipe – Honey Ginger Chicken Wings

Honey Ginger Chicken Wings

* 10 pcs chicken wings
* 1 tsp ginger
* 1 tsp garlic
* 3 tbsp soy sauce
* 2 tbsp honey
* 1 tbsp brown sugar
* salt and pepper
* 1 cup flour (for dredging)

1) Season chicken wings with salt and pepper. Then roll in flour and coat. Place chicken pieces in skillet and fry on medium heat until golden brown.

2) Add the soy sauce, honey and sugar. When the sugar melts, add the chicken wings. Continue cooking the wings, turning them over often. Cook until the wings are sticky and cooked through. Garnish with sesame seeds and serve.
