Avocado Spinach Spaghetti

* 250 grams spaghetti
* 2 garlic cloves (finely chopped)
* 1 cup spinach
* 1 avocado
* ¼ cup olive oil
* ¼ cup pasta water
* ½ lemon

1) Cook the spaghetti according to pack instructions.

2) As spaghetti is cooking, put all remaining ingredients into a blender and blitz until smooth.

3) Drain spaghetti and mix with sauce.

4) Serve immediately.

* Delicious served with grated parmesan cheese and chopped parsley.

Vietnamese Coffee Milkshake

* ½ cup brewed espresso (strong, chilled)
* ½ cup milk
* 2 tbsp. sweetened condensed milk
* ½ gallon coffee ice cream

1) Prepare a strong brewed cup of espresso by combining boiling water with espresso and dissolve espresso. Chill in refrigerator or freezer until cold.

2) In a blender, combine chilled espresso, milk, sweetened condensed milk and coffee ice cream. Blend until smooth. Serve in a chilled glass.

* If you can make this milkshake with real Vietnamese coffee, that would be even better!

This Vietnamese Coffee Milkshake is a strong brewed coffee milkshake with sweetened condensed milk inspired by Vietnamese style coffee.

Mozzarella And Pesto Chicken In A Crock Pot

Cook time: 8 Hr  Prep time: 10 Min  Serves: 6-8

* 8 boneless skinless chicken breasts
* 6 ½ ounces pesto
* 1 package ranch dressing (powder mix)
* 1 ½ stick butter
* 1 cup mozzarella cheese

1) Place Boneless Skinless Chicken Breast in a Crock Pot. Spread Pesto evenly as possible on all visible surfaces of the Chicken.

2) Sprinkle the Dry Ranch Mix over Chicken. Pour the Chicken Broth over Chicken. Drop stick of Butter in the middle.

3) Heat on Low for 6 – 8 hours or High for 3 – 4 hours. Sprinkle with Mozzarella before serving.

Avocado Lime Rice

* 5 cups cooked brown rice (preferably day old)
* 2 avocados (medium ripe)
* 2 tbsp. fresh lime juice
* ¼ tsp. ground cumin
* 1 clove garlic (minced)
* salt
* freshly ground black pepper

* In a large mixing bowl, mash avocados. Stir in lime juice, cumin and garlic. Season with salt and pepper, to taste. Stir in warm cooked rice and serve.

Healing Asian Soup With Ginger

* 4 cups homemade chicken stock (canned low sodium chicken broth; both would work too)
* 4 slices fresh ginger root
* 1 cup sliced mushrooms (any type; however, mild white mushrooms is best recommended as it is more soothing for the tummy)
* 1 cup spinach leaves (sliced into thin ribbons)
* 1 green onion (very thinly sliced)

1) In medium saucepan, bring chicken stock to a low simmer. Add ginger slices and let simmer at least 15 minutes or longer. (Taste to see if you have as much ginger flavor as you’d like.) If you’d like a clear soup, use a yogurt strainer or coffee filter to strain the ginger-infused chicken stock, then rinse pan and put strained stock back into pan. Add a small amount of water if the stock has reduced very much.

2) While ginger simmers in stock, wash and slice mushrooms and thinly slice spinach leaves. Clean green onion and slice into very thin slices. Bring infused stock back to a low simmer, then add mushrooms and simmer 1 minute. Add sliced spinach and simmer one minute more. Turn off heat and add green onions, then serve soup hot, with chopsticks to eat the veggies after you drink the broth.

Tiramisu Iced Coffee Ice Cream Float

* 1 ½ gallon iced coffee (International Delight ® Vanilla)
* 12 scoops vanilla ice cream (coffee, chocolate, caramel or any other ice cream works here too)
* 1 cup whipped cream (store bought or home made)
* chocolate sauce (milk, recipe below)
* 8 cookies (lady fingers, dipped in chocolate or chocolate sauce)
* chocolate shavings (optional)
* 1 cup chocolate chunks (milk or dark chocolate; use your favorite)
* 1 cup heavy cream

* Place about 2 scoops of ice cream at the bottom of each glass and pour the Iced Coffee over it filling about 3/4th of the way. Then top that with whipped cream and drizzle some chocolate to your taste. Now stick a couple of lady fingers in the cup and serve right away!

To make the chocolate sauce, put the ingredients in a bowl and microwave ofr about 1-2 minutes, then whisk until smooth.


Compiled Recipe – Pumpkin Pie Oatmeal

Pumpkin Pie Oatmeal

* ½ cup old fashioned oats
* 1 cup water
* ¼ cup pumpkin puree
* 1 ½ tsp. pumpkin pie spice
* 1 tsp. vanilla extract
* 1 pinch sea salt
* 1 tbsp. maple sugar (or maple syrup)

1) In the microwave or on the stovetop, cook the oats and water until completely cooked (in my microwave, it takes 3 minutes on 60% power). To the cooked oatmeal, add the rest of the ingredients and stir until completely mixed.

2) Taste, and add more maple if you like your oats sweeter, or add more pumpkin pie spice if you like things spicier. Eat, enjoy!



Compiled Recipe – Keto Macadamia Nut Coffee

Keto Macadamia Nut Coffee

* hot coffee
* heavy whipping cream (if dairy-free, use water or unsweetened almond milk)
* 8 ounces hot coffee
* ¼ cup macadamia nuts (roasted and salted)
* 3 tbsp. heavy whipping cream (if dairy-free, use water or unsweetened almond milk)
* 1/8 tsp. stevia
* 1 tbsp. oil (optional but recommended)

1) Add all ingredients to a high-powered blender.

2) Blend on medium for 60 seconds, then on high for 30 seconds.

3) After blending, pour your coffee into a cup and try it. If it’s too thick, add it back to the blender with just enough water to thin it out to your liking. If it has little pieces of macadamia nuts in it, add it back to the blender and blend longer until the consistency is smooth.

* What to do if you don’t have a high-powered blender: Use Vitamix to make this coffee, which does a great job of liquifying whatever you put in it. If you don’t have a high-powered blender, you have two choices.
* Blend longer.
* Soak the macadamia nuts in water for 30-60 minutes before making the coffee. When you drain the soaking water, you’ll drain off the salt, so you may need to add a pinch of salt to match the flavor of un-soaked macadamia nut coffee.


Compiled Recipe – Traditional Alfredo Pasta

Traditional Alfredo Pasta

* 1 cup grated parmesan cheese (freshly grated, divided)
* ½ cup butter
* 2 cups long pasta (fettuccine)
* black pepper

1) In a large pot of boiling salted water cook the fettuccine al dente.

2) In a medium pan, add 1/2 the butter, 1/4 cup Parmesan cheese and 1/2 a ladle of hot pasta water. On low medium heat, whisk together to make a cream.

3) Add the drained pasta, another 1/2 ladle of hot pasta water, the remaining butter and parmesan cheese, gently toss together on low heat (for about 1 minute) and serve immediately, sprinkle with parmesan cheese and black pepper.  Enjoy!
