Compiled Recipe – Christmas Tree Oreo Cookie Balls

Christmas Tree Oreo Cookie Balls

* 6 oz. brick cream cheese, softened
* 1 package  (15.25 oz.) Oreo Mint Crème Cookies, finely crushed
* 3 packages (4 oz. each) white baking chocolate, melted
* 6 drops green food coloring
* 3 tbsp. green and/or white decorating icings
* 40 small hot cinnamon candies

1) Mix cream cheese and cookie crumbs until blended.

2) Shape into 40 (1-inch) balls.  Mix melted chocolate and food coloring until blended.  Dip 1 lollipop stick in melted chocolate, then insert chocolate-dipped end into center of 1 cookie ball.  Place on waxed paper-covered rimmed baking sheet.  Repeat with remaining cookie balls. Freeze 10 min.

3) Dip balls in remaining chocolate; return to baking sheet. Decorate with decorating icing and candies as shown in photo. Refrigerate 1 hour or until chocolate coating is firm.  Keep refrigerated.


Compiled Recipe – Slow Cooker Minestrone Soup

Slow Cooker Minestrone Soup

* 3 sticks celery, chopped
* 3 small carrots, peeled and sliced
* 2 small zucchini, quartered and sliced
* ½ large onion, chopped
* ½ pound green beans, trimmed and cut into thirds
* 2 cans kidney beans, rinsed and drained
* 4 cups unsalted broth
* 4 cloves garlic, minced
* 1 to 28 oz. can diced tomatoes
* 1 to 14 oz. can crushed tomatoes
* 1 ½ tsp. kosher salt
* ½ tsp. black pepper
* 2 tbsp. red wine vinegar
* ½ tsp. dried basil
* ½ tsp. dried oregano
* 8 ounces whole wheat elbow pasta, cooked according to package directions
* parmesan cheese and black pepper serving

1) Put all ingredients, except for the pasta and parmesan cheese, in a large slow cooker. Cook on high for 4 hours or on low for 6-8 hours. Stir in cooked pasta and serve with parmesan cheese shavings and a sprinkle of black pepper.

Chocolate Coconut Marshmallow Treats

* ¼ cup unsalted butter
* 1 to 10.5 ounce bag of Campfire Mini Marshmallows
* 5 cups chocolate Chex cereal
* 2 cups chocolate granola (homemade or store-bought)
* 4 ounces semi-sweet chocolate chips
* ½ cup unsweetened coconut flakes, toasted

1) Lightly grease a 9×13 inch baking dish. Set aside.

2) In a large pot, melt butter over medium heat. Add marshmallows and stir until completely melted. Remove pan from heat. Stir in cereal and granola.

3) Press mixture into prepared baking dish, creating an even top layer. Drizzle with melted chocolate and toasted coconut. Let set at room temperate until firm. Cut and serve.

Compiled Recipe – S’mores Pudgy Pies

S’mores Pudgy Pies

* non-stick spray or oil for pie irons
* 8 slices cinnamon swirl bread
* 4 graham cracker squares, crushed into large crumbs
* ½ cup chocolate chips
* 1 cup Campfire mini marshmallows
* special equipment: pie irons

1) Lightly grease pie iron with oil or non-stick spray.

2) Place one slice of bread in one half of the pie iron. Sprinkle with 1/4 of the graham cracker crumbs, 2 Tablespoons of chocolate chips, and 1/4 cup of Campfire® Mini Marshmallows.

3) Place a second slice of bread over the marshmallows and close the pie iron. Pull any excess bread off with your fingers.

4) Cook pies over fire for 1 minute, flip and cook for an additional minute on the other side. Carefully open pie iron and tip pie onto plate. Enjoy!



Compiled Recipe – Puto Bumbong Milkshake

Puto Bumbong Milkshake

* Alaska evaporated filled milk
* Alaska sweetened condensed filled milk
* 4 to 6 pieces puto bumbong
* 2 cups ice

1) Chop puto bumbong into 4 to 6 bite sized pieces.

2) Set aside in the freezer overnight.

3) In a blender, add 2 cups ice, ½ cup of Alaska Sweetened Condensed Milk and 1/3 cup of Alaska Evaporated Filled Milk.

4) Blend until the ice is crushed to smaller pieces.

5) Add the frozen puto bumbong into the mixture.

6) Blend the mixture until fully combined.


Compiled Recipe – Peppermint Mocha Frappuccino

Peppermint Mocha Frappuccino

* 2 cups ice cubes
* 1 cup brewed coffee, or more to taste
* ½ cup fresh milk
* 1 tbsp. simple syrup, peppermint flavored
* 2 tbsp. chocolate syrup (use Hershey’s)
* 1 tbsp. simple syrup
* whipped cream (to top)
* chocolate, shaved (to top)

1) Blend ice cubes, coffee, milk, peppermint syrup, chocolate syrup and sugar syrup in a blender until smooth. Add more coffee, if desired.

2) Pour into glasses. Top with whipped cream and sprinkle with chocolate shavings.


Compiled Recipe – Buttered Shrimp

Buttered Shrimp

* 2 tbsp. butter
* 3 tbsp. cooking oil
* 1 kilo shrimp, peeled and de-veined
* 5 cloves garlic, diced
* chopped spring onions (for garnish)

1) In a medium-sized pan over medium heat, add butter and oil. Add garlic and shrimp, saute for 1-2 minutes.

2) Cook until shrimp turns orange. Top with chopped spring onions. Serve warm.

Compiled Recipe – Sopapilla S’mores

Sopapilla S’mores

* 1 can refrigerated crescent roll dough (full sheet if available)
* vegetable oil for frying (1-2 cups)
* ¼ cup granulated sugar
* 1 tbsp. ground cinnamon
* 24 Campfire Marshmallows, regular size
* honey

1) Unroll crescent roll dough on a work surface. Use a knife or pizza cutter to cut dough into 3 strips length wise. Cutting across the strips, divide the dough into fourths creating 12 squares of dough. Set aside.

2) Add enough oil to a deep skillet that it reaches 1 inch up the side of the skillet. Heat over medium heat to about 325°F. The oil will be shimmering. Working in batches, use a wire spider or tongs to carefully place dough into the hot oil. Fry for about 30-60 seconds on each side, watching carefully to avoid burning. Remove fried dough to a paper towel lined baking sheet to drain. Repeat with remaining dough.

3) Place sugar and cinnamon in a large zip top bag. Place 2-3 pieces of fried dough into the bag, seal it, and shake to coat with the cinnamon sugar mixture. Repeat with remaining fried dough. Place finished sopapillas back onto baking sheet in a single layer.

4) Roast your marshmallows over an outside campfire or carefully over the flame of a gas stove. Place two marshmallows on top of each sopapilla then drizzle with 1-2 teaspoons of honey.

5) Serve immediately and enjoy!



Compiled Recipe – Turtle Pecan Milkshake

Turtle Pecan Milkshake

* ¾ cup vanilla ice cream (about 3 scoops)
* 1 cup milk
* 2 tbsp. pecan pieces
* 1 tbsp. caramel sauce
* 1 tbsp. magic shell chocolate topping

1) Add ice cream and milk to blender, then add pecans, caramel, and chocolate topping. Pour the chocolate topping into the center of the blender, otherwise it will really stick to the sides. Let the topping sit for a few seconds to harden a little before blending.

2) Blend until well combined.

3) Pour milkshake into glasses and serve with straws and spoons to scoop up the yummy bits that settle to the bottom.
