Garlic and Chili Vinegar
* 1 cup vinegar
* 3 bird’s eye chilies (siling labuyo), chopped (plus more to taste)
* 3 cloves garlic, smashed
1) Heat vinegar in a saucepot over medium heat. Once hot (but not boiling), remove from heat and add bird’s eye chilies and 3 cloves garlic.
2) Transfer to a clean jar once cool. Allow to sit for at least 1 day.
