Salted Caramel Yema
* 1 (300 mL) can condensed milk
* 5 egg yolks (from large eggs)
* 2 tbsp vegetable oil
* ¼ tsp salt
* 1 cup sugar
* 2 tbsp corn syrup
1) Whip condensed milk, egg yolks, vegetable oil and sea salt in a medium saucepan until well combined. Cook over medium low heat, stirring constantly, for 15 to 25 minutes or until thick; set aside to cool.
2) Shape teaspoonfuls of mixture into balls; set aside. Heat sugar and corn syrup in another saucepan over medium heat for 5 to 10 minutes, or until sugar turns into a deep-brown caramel. Using a toothpick, pick up balls and quickly dip in hot caramel. Place balls on greased tray. Sprinkle sea salt on top before caramel sets.
