Compiled Recipe – Kapeng Barako Leche Flan

Kapeng Barako Leche Flan

Ingredients:
(Top layer – custard)
* 1 tbsp gelatin powder
* 1 can thin coconut milk
* ¾ cup sugar
* 1 cup palm sugar
* 1 tsp vanilla
* pandan leaves
* pinch of salt
(Bottom layer – coffee jelly)
* 2 cups brewed coffee
* 1 cup palm sugar
* 1 tsp gulaman powder
* 1 tsp vanilla

Preparations:
(Top Custard Layer)
1) Pour coconut milk in a mixing bowl.

2) Add sugar, gelatine powder and salt.

3) Stir constantly as the sugar dissolves.

4) Add pandan leaves and palm sugar, put in medium high heat.

5) Keep stirring until mixture turns into a full boil.

6) Turn the heat off, remove pandan leaves and add vanilla extract, stir.

7) Pour in a flan or jelly mold and let it chilled thoroughly.

(Bottom Coffee Layer)
8) In a mixing bowl, pour brewed coffee, palm sugar and gelatine powder.

9) Stir constantly until mixture turns into a full boil

10) Turn the heat off, add vanilla extract and stir.

11) Pour on top of the custard layer and let it chilled thoroughly.

Tips:

* Lightly grease the inside of the flan or jelly mold.
* Before starting the coffee layer, wait until the custard layer has thoroughly chilled.
* Gelatine or agar-agar is measured in 2 cups of coffee or coconut milk.
* Always read the packaged of gulaman, jelly and agar agar for exact measurement
