Compiled Recipe – Salmon and Sour Cream Potatoes

Salmon and Sour Cream Potatoes

* 4 medium potatoes, washed
* 1 tbsp olive oil
* salt and pepper (to taste)
* 2 tbsp butter
* ½ cup sour cream
* 2 tbsp chives, chopped
* ½ cup smoked salmon, sliced

1) Pierce potatoes all over with a fork. Rub oil over skin; season with salt and pepper. Place on a microwaveable plate. Microwave on high for 5 minutes. Turn potatoes and cook for 5 more minutes.

2) Make a slit on top of each potato and fill each with ½ tbsp butter. Top with sour cream, chives and salmon. Serve immediately.
