Carrot and Apple Slaw
* ½ cup heavy cream
* 2 tsp lemon juice
* 1 tsp apple cider or white wine vinegar
* ¼ tsp ground cumin
* salt and pepper
* 2 medium carrots, julienned
* 1 red delicious apple, julienned
* 1 ½ cups dried cranberries
1) Combine heavy cream, lemon juice, apple cider or white wine vinegar, ground cumin, salt and pepper; chill.
2) Julienne carrots and apple. Toss dressing into carrots and apples. Sprinkle with dried cranberries. Serve chilled.
