Pulled Chicken Sandwich
*1 quarter rotisserie chicken, shredded
* 1/8 to 1/3 cup barbecue sauce (use Hunt’s)
* salt and pepper (to taste)
* 1 burger bun, toasted
* 1 gherkin pickle, sliced
1) Shed rotisserie chicken quarter into strands, discarding the skin for another use; place in a bowl. Add 1/8 to 1/3 cup barbecue sauce, depending on how saucy you want your sandwich to be; season with salt and pepper.
2) Place bottom half of a burger bun on a plate. Top with chicken and gherkin pickle before topping with top half of the bun. Serve warm.
