Pelmeni With Onions and Mushrooms In Crock Pots

Ingredients:
* 500 grams pelmeni
* 1 onion
* 200 grams mushroom
* 200 grams sour cream
* 100 grams mayonnaise
*salt and pepper – to taste

For the pelmeni:
*300 grams flour
*200 grams of pork and beef (stuffing)
* 200 grams milk
* 1 egg
* 3 individual crock pots

Preparations:
1) For the stuffing: mix 150 grams of pork, 150 grams of beef and 1 onion in a meat grinder. Add salt and pepper to taste. Add 100 grams of milk. Mix the stuffing very well.

2) For the dough: Sift the flour and make a trough in it. Beat in an egg and stir. Add 100 grams of milk and salt. Knead the stiff dough and let it stand.

3) For the pelmeni:  Roll the dough into a thin layer that is 1.5 mm thick and cut out small circles that are 4 cm in diameter using a glass or cup. Place the stuffing in the middle of the circles and then pinch the edges, forming angular tips. Fry the mushrooms and onion in a pan. Fry the pelmeni in vegetable oil until they are golden brown.

4) For the sauce, mix sour cream and mayonnaise with water in a 1:1 proportion. Add salt and pepper as well as any of your favorite spices to taste. Grease the sides of the crock pots with butter in order to ensure that nothing sticks to the sides.

5) Add the ingredients in layers: add a layer of fried pelmeni to the bottom of the crock pot, then a layer of mushrooms and onions, followed by another layer of pelmeni, mushrooms and onions . Pour in the sauce until the pelmeni are completely covered.

6) Cover the crock pots and bake them for 30 minutes at 180 degrees.

We Love Chops

What I loved about Chop Stop is its design concept . You could see the traffic signs as its wall design. Perhaps, I could have taken a picture of its whole view. This was in Farmer’s Plaza, Cubao City.

What I tried during my visit here yesterday at Chop Stop is their BBQ Chops (pork).  This dish had just the right taste and you could also feel the crunchiness of its skin. I can’t help but love the savory sauce on this BBQ chops. Might as well try the other ones on my next visit here.

Beef With Pumpkin and Mushrooms In A Crock Pot

Ingredients:
* 600 grams beef
* 300 grams fresh mushrooms
* 300 grams pumpkin
* 2 yellow onions
* 500 grams carrots
* 500 grams potatoes
* 6 tbsp sour cream
* salt, black pepper, vegetable oil- to taste
* 6 individual crock pots

Preparations:
1) Cut the meat into small pieces and fry them in very hot oil. Slice the mushrooms. Cut the onion into half rings. Fry the onion until it is transparent, add the mushrooms, lightly salt them and cook over medium heat for 5 to 7 minutes. Set them aside in a separate bowl.

2) Peel away the pumpkin skins and then dice the pumpkin into 1.5×1.5 cm cubes. Cut the carrots into rings or cubes. Grate some of the carrots using a medium grater and then set aside. Fry the pumpkin cubes and carrots over high heat.

3) Peel the potatoes and then cut them into blocks or cubes. Place the mushrooms and onions in the bottom of each crock pot. Mix the sour cream with 250 mL of water and evenly pour this mixture into crock pots.

4) Place the crock pots into an oven that has been pre-heated to 200 degrees Celsius for 1 hr and 30 minutes.

Compiled Recipe – Banana Nut Muffins

Banana Nut Muffins

Ingredients:
* ¾ cups all-purpose flour
* ¾ cup granulated sugar
* 1 tsp baking powder
* ¼ tsp baking soda
* ¼ tsp salt
* 1 tsp ground cinnamon
* 1 cup walnuts, chopped and toasted
* 2 large eggs
* ½ cup unsalted melted butter
* 3 ripe large bananas, mashed
* 1 tsp vanilla extract
* 1 cup walnuts, chopped

Preparations:
1) Pre-heat oven to 350 degrees . Line muffin tin with paper cases.

2) In a large bowl, combine the flour, sugar, baking powder, baking soda, salt and toasted walnut. Mix I well.

3) In a medium sized bowl, beat the eggs then combine the mashed bananas, melted butter and vanilla . Mix it well.

4) With a rubber spatula, lightly fold the wet ingredients (banana mixture) into the dry ingredients just until combined and the batter is thick and chunky. Spoon the batter into the prepared muffin tins and sprinkle with the walnuts topping.

5) Bake about 25 minutes. Remove banana muffins from muffin tin. Serve warm at room temperature.

Compiled Recipe -Stew (meat served in crock pots with vegetables)

Stew (meat served in crock pots with vegetables)

Ingredients:
* 400 grams tenderloin of beef or venison
* 1.5 tbsp butter
*2-3 potatoes
* yellow onion
* 1-2 carrots
* turnip
* ½ cup sour cream
* 2 cloves garlic
* 1 cup beef broth
* 60 grams rye breadcrumbs
*pepper, salt, bay leaves – to taste
* 300 grams puff pastry

Preparations:
1) Cut the meat into pieces that each weigh 50-60 grams. Tenderize the meat with a wooden hammer, salt it, place it in a bowl and let it stand covered for 20-30 minutes. Chop the onion and fry it. Pour the melted butter into the ceramic crock pots. Add the bay leaf, pepper and meat. Slice the vegetables and place them in the pot with the meat. Pour in the broth, add salt, and sprinkle with chopped fried onion and breadcrumbs. Place the crock pots in a pre-heated oven. Stew for 60 minutes at 180 degrees Celsius.

2) Add the sour cream and mashed garlic 35-40 minutes into the stewing process. Roll out pastry puff and cut it into squares that are 10*10 cm in size.

3) Cover the pots with the pastry like a napkin. Brush the pastry with egg yolk and place the covered crock pot in the oven for the last 15-20 minutes.

4) Serve the dish in the crock pot with fresh cucumbers, tomatoes and lettuce.

Compiled Recipe – Almond Biscotti

Almond Biscotti

Ingredients:
* 1 cup blanched whole almonds
* 2 eggs
* 1 tsp almond extract
* 1 ¾ cups all-purpose flour
* 1 tsp baking powder
* ¼ tsp salt
* 2/3 cup sugar
* Melted chocolate chips to garnish

Preparations:
1) Place whole almonds on cookie sheet and toast in an oven on 350 degrees Fahrenheit for 10 minutes or until golden. Remove toasted almonds and let cool before chopping coarsely.

2) In a medium-sized bowl, whisk together eggs and almond extract. In  a large bowl, combine flour, baking powder, salt and sugar. Stir well. Add egg mixture to flour mixture and stir until well combined.

3) Finally, add toasted almonds and mix well.

Compiled Recipe – Lentil Soup

Lentil Soup

Ingredients:
* ¼ cup olive oil
* 1 onion, chopped
* 2 carrots, diced
* 2 stalks celery, chopped
* 2 cloves garlic, minced
* 2 cups dried lentils
* 8 cups water
* 1 (14.5 oz) can crushed tomatoes
* ½ cup spinach, rinsed and thinly sliced
* 2 tbsp vinegar
* salt to taste

Preparations:
1) Heat oil in a large pan over medium heat.

2) Add onion, carrots and celery. Cook until onion is tender.

3) Stir in garlic, oregano,  bay leaf, basil and cook for 2 minutes.

4) Stir in lentils, then add water and chopped tomatoes.

5) Bring to boil. Reduce heat.

Ingredients:
* 2 eggs
* 1 ¼ cups sugar
*1 ¾ cups whole milk or half-and-half
* 2 cups heavy whipping cream
* 2 teaspoon vanilla
* 1 ½ teaspoon instant espresso coffee, dissolved in tiny amount of warm water

Preparations:
1) Beat eggs and sugar in electric mixer until thick and cream-colored.

2) Add milk, cream, vanilla and dissolved instant coffee. Mix well. This can be refrigerated or used immediately.

Compiled Recipe – Roasted Sardines with Red Tomatoes

                                                       Roasted Sardines with Red Tomatoes

Ingredients:
* 500 grams cherry tomatoes
* 1 pc fennel
* 1 head lettuce
* 40 mL olive oil
* 5 grams ground black pepper
* 5 grams sea salt
* 5 slices whole grain bread
* 12 small sardines

Preparations:
1) Wash and gut the sardines. Turn the fish over skin-up, press them from top to bottom with the flat of a knife and remove the spines, keeping the tails, then add salt and pepper.

2) In a large, deep baking tray, pour 1 tbsp of olive oil, then put the fish in backside-up. Grate the lemon over a fine grater.

3) Chop the fennel into very thin strips and chop the herbs very finely. Sprinkle the sardines with fennel, place tomatoes with stems on top, spritz everything with remaining olive oil, and add salt and pepper.

4) Put the baking tray on the grill 5 to 7 minutes. Put the baked sardines on the bread and serve with baked tomatoes and lettuce leaves.
